You dont need a meatloaf recipe. Use 1 egg per half pound of meat and make sure you have worcestershire, dijon mustard, and ketchup/tomato paste. You can add basically anything after that, so long as there isnt too much liquid. I like adding whatever herbs are on hand, some sambal oelek, and a bit of molasses. I also use a handful of oatmeal in the loaf and the coat the top with oatmeal as well.

This is my nans recipe, always loved it

Ingredients: Meatloaf: 500g mince, 500g sausage meat, 1 onion finely chopped,
parsley, 1/2 teaspoon curry powder, I cup breadcrumbs, 1 egg

Glaze/Gravy: 1/2 cup tomato sauce, 1/4 cup Worcestershire sauce, 1/4 cup vinegar,
1 tablespoon lemon juice, 1/2 cup water, 1 tablespoon butter, 1 & a 1/2 heaped teaspoons
of instant coffee (the secret ingredient), approx 1/3 cup dark brown sugar

Method: Mix meatloaf ingredients together by hand. If a bit dry, add a little milk.
Shape into a loaf. Bake at 180 degrees for about 1/2 an hour. (Pour off any fat).
While the above is cooking, make the glaze/gravy. In a large saucepan, combine the
glaze/gravy ingredients and bring this all to the boil. Pour over the meat loaf & bake
a further 3/4 of an hour, basting frequently. Serve hot with steamed vegetables,
including mashed potatoes, or slice when cold and serve with salad.

This Is generally the one I make

1 Lb of ground beef

1 lb of ground turkey

1 cup of bread crumbs

1/2 cup of milk

2 eggs

2 teaspoons of dried parsley

Mix all that together in a bowl, season it with salt, pepper, onion powder, garlic powder and any other spices you may fancy. put that into the pan

cover the pan with tin foil, cook in it the oven at 350 F for 1 hour. Remove the tin foil. Let cook for another 15 minutes. Remove the pan from the oven, take the loaf out of the pan and let sit for 10 minutes

I ditch the red sauce and substitute it with Beef Grave. More often than not, there will be some made since I usually serve mashed potatoes with my loaf.

This is actually a slightly altered version of a recipe that came with the "Perfect Meatloaf Pan!" (pic related) One of those as seen on TV gimmicks. I picked my up from a flea market. The thing actually works pretty good. Its nice not to have the loaf come out all soggy and falling apart

I made one from Jean Andersons "falling off the bone" book last week. It was pretty amazing. It was Russian or something. What threw me off was the chopping up dill pickles and putting them in but they were really good. My entire family loved it. You can find the recipe online.

Ground beef, egg, breadcrumbs, and cheddar cheese wrapped in bacon and topped with ketchup and more cheese
