Flour, water and salt, these are tortillas de agua. One of the perks of living in Mexico. Really thin, big, toasty and very lightly smoked if cooked on a comal over coals. One of these with a coffee is real norteño fare.

That is why they are called water tortillas. This is what allows them to be streched out so much, no "shortening" to work againsed the gluten.
And yes, with no fat they don't keep well,they dry out, but are heavenly fresh and hot.
