I was in Philly on business about a year ago. I went to both places, and frankly I wasn't impressed. I got a far better Philly from some hole-in-the-wall Italian joint that one of my customers took me. Sorry, I don't remember their name or location otherwise I would post it. Anyway, ask Philly locals. They will set you straight.

I disagree with "just find some hole in the wall". There's plenty of those that suck too. Every sandwich and pizza shop in town sells cheesesteaks and many of them taste similar but there little differences like how coarsely the meat is chopped, how much and whay kind of cheese, and with every other little variable opinions will vary from anon to anon..

Here's how I would go about it if choosing blindly: stop a local and ask them. We're quite happy to help you out. If you can't do that, find a place that:

- has a small menu, if they sell every possible food item you've ever heard of, they are probably all mediocre

- has regular people working there. no aliens, fast-food teenage types, etc. 30yr or older folks, maybe 4 or 5 working there, look possibly related, that's your best bet. bonus points if italian. they don't necessarily cook better, but they seem to take more pride in their cooking and will try harder

- does not have a shitload of flashy signage stating how legendary they are. that never pans out.

- is moderately busy. my fav place is in an obscure spot with no foot traffic and somehow ended up by itself in an area zoned residential, so not many know/care its there. I give them a pass. But if you're near city center and the place is dead, there is a reason

The sammich shops don't care if you hang out and watch them make food. In fact, it is very rare to find a midwest style shop where you pay at a counter and the food is made in the back out of view. Here, the counter is just one end of the prep/grill/bake area. Hang out for a bit before you order and see what's cookin. See if it looks like quality ingredients, prepared skillfully, and ratios are what you like/expect. If not, walk two doors down to the next shop.

I would also advise you not order what is usually called a "full". That's the family size portion. You eat that and you are done for the day. Get a "half" or even better a "mini". That way you can sample several.

Ah and don't worry about the "authentic" bullshittery you may have heard. If the ingredient is on hand, they will add it to your steak without groaning. We just get tired of every chopped steak sammich being called a "philly". It would be the same thing if every pizza joint called their thin crust pizza "chicago style" just because of the catchy name. Its a completely different recipe. Philly Steak is a recipe. Some like it, some like to accessorize and that's fine.

The thing that makes a cheesesteak authentic in Philly is the bread. You got to go with Amoroso. That said, the best cheesesteak in Philly is at Dalessandro's in Roxborough (far northwest Philly), although that isn't the best or most authentic Philly sandwich, if you want that get a italian pulled pork with broccoli rabe.

Even that is BS. The philly sandwich was invented before cheese wiz, so the original must have had a different kind of cheese on it. That being said, Wiz has been offered for decades and decades in Philly so even though it's not "the original" it certainly is popular.

People on the internet always try to talk up the "local" places. The internet is right about Pats and Genos being tourist traps, but they are wrong about all the small little shops having really good cheesesteaks. Most of those corner stores have good cheesesteaks that are cheap, but they are nothing special that you couldn't get elsewhere in the country. You would just be paying more

Now the locally famous places are really good. Jims, Chinks, Tony Lukes, Max's etc are really good. Personally Im not a big fan of Tony Lukes since they use a weird tasting extra sharp provolone, but everyone else I was with loved it. Chinks is definitely the best in the city.
