I understand some people don't "get" what mouthfeel is. Allow me to explain.
Ever eat an unripe persimmon, an accidental piece of banana skin or had a swig of an exceedingly dry wine? Notice the prickly-like effect left to the tongue, where the saliva thereon beads on contact with the offending food? That's a puckering mouthfeel and is one many different mouthfeels. That one is particularly unpleasant and I don't think anyone actually enjoys it.
Mouthfeel combines things like texture, temperature, food-shape and taste into one, cohesive word.
How would you feel if you'd bought a jar of your favourite peanut butter to find that rather than the undoubtedly thick and somewhat sticky foodstuffs you've grown to love, opening the jar introduced you to a slippery mass of liquid discontent? I mean, it otherwise tastes the same and has the same density, believe it or not. It's just that it went from something thick and stickyish to smooth and slippery. Maybe you now understand how important mouthfeel is and why it's not something to be scoffed at.
