I am not allowed dairy, bread, grains, legumes, nuts, sugary things, carbs or starch

I can eat meat/poultry, a lot of vegetables, not many fruits, pretty much everything else I guess

What kind of cookbook should I get? The ones I find are generally hard to use

Go with a professional training cookbook like a Gisslen. Pick one up second-hand so you don't overpay and have at it.

You can't eat a fucking thing other then meat and veggies. So you're missing out on a huge selection of stuff, but I'd suggest a Mediterranean cookbook. They eat mostly meats and veg.

Make an account on supercook, add a bunch of foods you CAN eat to your "pantry," and voila, you have a cookbook.

Though, I'm having a hard time believing you really can't eat all those things. Carbs are a human's main source of energy. How the hell do you stay alive? You must have ketosis by now.

The dairy, bread/grains (the gluten) are legitimately things I can't tolerate, but carbs/starch/legumes/nuts are things I don't allow myself because of health goals and to not feel like shit (not really here to discuss it though as it goes nowhere)

Obviously you can't completely avoid carbs, and you need at least some to keep going but high carb foods I have to avoid, I don't do well on carbs

As someone studying nutrition, I suggest you at least make an exception for the occasional fruit, potato or rice. And don't group breads/grains all together, not all grains contain gluten.

Why can't you have dairy? Is it a milk allergy or lactose intolerance? If it's an allergy, you may be able to consume products made with goat milk. If it's lactose intolerance, then small amounts of dairy shouldn't harm you.
