Yeah, it's easy but the stock takes a long time to make properly. I can see people wanting to get lazy about that.

The trick is to make a large batch, portion it up and freeze it. That way you can enjoy good pho without having to wait hours to make the stock every time.

1) It's the wrong flavor for pho (Pho stock is not the same as western-style beef stock)

Pho is not that hard to make, it's just time consuming. I'm okay with spending $6 per bowl for the stuff. I won't ever make any amount of pho were the time involved will be worth it. Were I to make, say, 50L of stock at a time, like I know one local pho place does, it'd be worth the time, but otherwise, it just isn't.
