Hey /ck/, /a/ here trying to make my weeb dinner, why does my rice always take like 3x the amount of time to absorb the water as the recipe says it will?
I swear I must be retarded or something.

It's been ten minutes more than the recipe said it would take and not only is there still like an inch of water in my skillet but the rice is mostly hard.

Does it matter that I used fancy rice? Is that different from instant?

Are you using dry rice from the bag?

1. Wash rice until the water is relatively clear.
2. Use a water-to-rice ratio of about 1.25 to 1.
3. Simmer the rice for about 15 minutes, half covered
4. When most of the water is evaporated there will be little craters between the rice grains where air bubbles escaped. Now you should shut off the heat and leave it covered.
5. Ideally you should leave it covered until little to no steam escapes when you open the lid.

I'm using a recipe from a book that told me to bring two cups of water to a boil and then stir in the rice and remove it from the heat and let it sit for five minutes or until the water was absorbed.
I've done all of that, but it's been off the heat for about 30 minutes now and not all the water is absorbed.

Funny, I thought this was a troll thread at first.

OP, you're used to instant rice, or minute rice. It's parcooked, which means it's precooked and dried. All that needs doing to it is rehydration, and it's what a lot of Americans think of when they think of rice.

I don't even think Asians know it exists, because frankly, if you're accustomed to real rice it's disgusting. Real rice cannot be cooked in a minute or five, however, it takes 30 or more because you're actually cooking it instead of just hydrating it.

I don't think Japanese people use long-grain rice at all but I dunno if it's a huge deal.

The Japanese use medium grain rice for just about everything. They use short-grain for sushi, which is expensive. Try getting rice from an Asian market, or making sure the brand of rice you're getting is authentic Asian. Brands like Nishiki are often stocked in general supermarkets.

When the water is gone, you have to let it rest for about 10 minutes so the rice can properly absorb the steam.
