Hey /ck/

I'm making a gumbo for my family tonight. I'm certain at least one of them will suggest letting it rest for hours or overnight, since they have this weird idea that leftovers somehow change in flavour.

How do I explain to them that fresh food is safer and better than food that's been sitting in a tupperware in the fridge for days?

I don't see the logic. No chemical changes occur when food is refridgerated, which is the point of refridgerating it in the first place.
