McDonald's get's their processed cheese from Saputo, their supplier. They sell retail processed cheese. Go look at their website for what the packaging looks like and that's your cheese.

I remember reading a long time ago that it's the fact that the cheese is processed and has a much higher fat content.

It's texture is crazy though. Like plastic.

I noticed that on hotpockets. Next time you're in the store, check the ingredients on lean pockets pepperoni flavor vs hotpockets pepperoni flavor. Lean uses real mozzarella Hot uses processed.
