If the noodles are thick and non-curly, then they're udon noodles. Beyond that, it would be a guessing game.

Los Angeles in the movie was a cultural melting pot, so I wouldn't be surprised if Deckard's food was a combination of multiple cuisines.

When Edward James Olmos talks to Deckard at the White Dragon noodle stand (named after White Castle) he speaks French, Hungarian, German, and Japanese, so it could be a fusion of Japanese udon with spicy shrimp broth (common in Japanese cuisine), French escargot and Hungarian csabai. But like I said, the actual flavors are just guesses.

Although it was only hinted at in the movie, it's pretty explicit in Do Androids Dream of Electric Sheep that basically all fauna has been extinct for some time (and while I realize for all intents and purposes Blade Runner would be in a different Universe/Reality due to the vast differences, most creatures seen were mentioned as being cloned/replicant).
