Fellow co/ck/s, I'm cooking jambalaya for dinner tonight for the first time. Using a rice cooker for it and have a recipe I stumbled across. Any tips you guys might have?

It could probably be done. It might even be gentle enough to make really dark rouxs.

Having said that, I live in LA and you can buy roux in jars at any supermarket. I've seen it in AR, TN, and AL stores, as well.

You can do it, don't worry. Just make sure there's enough liquid while you're doing it, that's the only problem as the rice cooker will automatically shut off.
