You salt the water to season the food, since the sated water will end up basically passing through the food and salt it better than if you just toss some salt over it after you take it out.

Though I think it's a bit stupid to only boil vegetables and not finish them on a saute pan in order to give them a crispness.

But if the osmolarity of the solution is lower than that of the vegetables the salt won't actually season the vegetables. Considering how most people add 1-2 tbsp of salt to a few litres of water, you definitely aren't salting the veggies.

It adds sodium, a mineral, that is beneficial to your body. Your vegetables also taste better and so you will consume more of them. Don't over do it though, over salting makes food taste bad and is purported to be bad for your vascular health in large quantities. That doesn't mean to eliminate it, it means take care in seasoning your food with salt.
