Simplicity is not necessarily "boring". If you have to pile on a lot of toppings on your pizza then the sauce and dough are probably ill prepared.

This, a thousand times. A plain cheese pizza is always my first test of an unfamiliar pizza place. If they can't even get that right, then I have no interest in trying anything further.

It's why I hate Papa Murphy's for example. Got a plain cheese pie from them. Tasteless cheese, shitty sugary sauce, and the crust was basically a non-entity. I dressed it up with grated cheese and crushed pepper and oregano and even fucking hot sauce to make it taste like anything.

Oh and if you make it past the plain-cheese phase, then the first toppings to test are: sausage, spinach, mushrooms, and garlic. Those are the easiest to fuck up.

Not him, but I have to say that it does seem kind of blank. While I'm not the type that likes a bit of pizza with his toppings (rather than the other way around), it's in my preference for my pizza to be visually appealing/vibrant and taste good aswell, but I can't vouch for the latter.

Outskirts of Philly (Bristol Township/Croydon). Wood fired brick over with slate surface. There's a thermometer on the outside, usually reads about 560-600. Sauce is Grifins, a company run by a couple guys one town over.

Probably one of the best kept secrets around... The place is in a residential area of a town with a population of ~2000. They have the best fish sammich and fish and chips ever, and those are hard to come by around here. Everybody carries it, but its always this frozen flounder nonsense. This place serves fresh tilapia batter dipped, and the portions leave you scratching your head as to how they stay in business. I must dig up some pics, its amazing.
