Need to use up most of a can of pineapple.
Have some chicken breast.
Is there some dish or stirfry that uses both of these?

Char sach mo'un mnoas, chicken and pineapple stir-fry. The recipe below can be multiplied.

Chicken, cut into strips, 250g (about a half pound)
Oil, as necessary
Ginger, thinly sliced into matchsticks, a fingerslength
Garlic, thinly sliced into matchsticks, 2-3 cloves
Chilies, thinly sliced into matchsticks, as desired/to taste
Pineapple, cut into chunks or strips, 100g
Fish, soy and oyster sauces, to taste
Asian basil, a big handful of leaves

Place chicken and oil into a frying pan and set to high heat.
Stir-fry until the chicken is coloured, but not cooked through, then remove the chicken from the pan and set it aside.
Clean the pan.
Add more oil then also the ginger, garlic and chili and set to high heat.
When fragrant, re-add the par-cooked chicken and stir-fry for a minute.
Add the pineapple and stir-fry for a minute.
Add the sauces and stir-fry for 30 seconds.
Off the heat and add the basil leaves and toss to incorporate.
Serve with rice.

A variation: rather than using the sauces, I mix a little tamarind soup mix powder with a little water to add both a salty and sour flavour that goes very well with the pineapple's sweet/tart flavour.

You can also make char sach mo'un mnoas kroeung, chicken and pineapple with Khmer lemongrass paste, but that might be a bit much for you (making the paste, I mean) or somlor machu sach mo'un mnoas, chicken and pineapple hot and sour coconut soup. This will need coconut milk and either Thai red curry paste (I recommend Kobo brand) or homemade kroeung (Khmer lemongrass paste, the predecessor to Thai curry pastes). It also will need sour tamarind and Asian-style chicken stock (Knorr makes one for Vietnam that is very good).
