Have you made them yet?

If so, how did they turn out?

I tried them with a ham and cheese filling and they were fucking amazing. I shallow-fried them in xv olive oil btw.

i make a vanilla shortbread with extra virgin olive oil, it's delicious. there are sweet flavours it wouldn't work with i suppose, but the floral/bitter thing plus sugar actually works really well in simple preparations.

olive oil would be better for more severe frying or for something where the flavour profile wouldn't work, but the whole 'you can't use it for cooking' thing is faddish. yeah it has a low smoke point and very volatile aromatic components but you can manage those in a cooked product if you know what you're doing.
