I'm about to go to a Japanese grocery store, what should I buy?
I already have mirin, dashi, miso paste (red and white), nori, and rice.

What's the difference between panko and regular bread crumbs? I had a crab cakes recipe call for panko the other day, and I used breadcrumbs that I made out of a pumpernickel loaf and some old kaiser buns, and it was fuckawesome.

Just checking to see what I'm missing, if anything.

There's no difference if you use them in meatballs, crabcakes, meat loaf, etc.

They do, however, have a lighter and crispier texture when used to coat deep-fried foods

Anyway, I wouldn't buy panko at a Japanese market--chances are it will be quite expensive. You can get panko from a supermarket--which probably has better prices.

Making soy sauce seems pretty difficult and requires years of study and preperation, it's easier to buy it sometimes from a well known established company that's been doing it for like 300+ years.
