When you stir in the eggs. You should do it off heat in a mixing bowl so your eggs don't scramble. Also I like to use Edam cheese. I use pancetta, assorted wild mushrooms, some red bell peppers diced, heirloom tomatoes and garnish with chives. You can also add a little truffle oil if you have it for extra awesomness.

Nah, don't do it in a mixing bowl. You beat the eggs and the grated Parmesan together in a mixing bowl, then you take the pan with the pasta and pancetta and shit off the stove, add the eggs, and stir - residual heat from the noodles will cook the eggs w/o scrambling them or anything.

The rest of that shit is inauthentic but to each there own, do what you wanna do.
