Here's my latest jerky batch.
I enjoyed the sweet notes rounding out the hot pepper.
Nothing more, just wanted to share.

▪ 2 kg (5 lb) lean brisket
▪ 470 ml (2 c) Kikkoman low sodium soy sauce
▪ 470 ml (2 c) Worcestershire sauce ( Lea & Perrins)
▪ 470 ml (2 c) Kikkoman Takumi Garlic & Green Onion
▪ 3oz Wrights Hickory liquid smoke
▪ 120 ml (1/2 c) Karo light corn syrup
▪ 3T garlic powder
▪ 3T brown sugar
▪ 5oz Bulliards cayenne pepper hot sauce

Baked in a Nesco dehydro for 5 hours

that is a mediocre jerk sauce, and damn me if that's not a wast of a good brisket.

Jerky is supposed to be made from the shittiest pieces of meat you can find. Something with lots of connective tissue and a decent amount of fat. Flank steak, skirt steak, shit like that.

And what the hell is it with faggots and "liquid smoke" Liquid ass more like. I PISS better smokiness than that. Cold smoke your meat dude. Dude, seriously.

Next you defeat the whole "jerk" process by playing to WET fucking sugars. Damn son, step up and use PURE CANE SUGAR or some motherfucking local honey. And Cayenne? Cayenne SAUCE? Wiskey tango, foxtrot, over? Sack up and use REAL peppers and manly ones too; serrano, cascabel, habanero, hell add heat and smoke, go with chipotle.

Finally, you have the unmitigated gall to COOK your jerky. In a commercial fucking dehydrator? Fuck you OP, just FUCK YOU! Make your own dehydrator for $30 or less and do it RIGHT.

The whole homemade dehydrator thing throws me off, I've never heard of anyone making their own. I can somewhat sympathize with his plea for a more pure sugar but in the end the difference is negligible when dealing with jerky. The ones suggested are a little better though.
