Cheap places actually are using the same things; frozen shit from distributors. All places are only showing you the crap: real Chinese food that Chinese people eat doesn't even resemble the sauce+ chicken+ rice that you order. I went around Richmond BC comparing various BBQ Pork Buns. The worst is Maxims (avoid Maxims for anything but that puri puri.) Best is that bakery in Aberdeen.

Langley Farm Market is usually good, although once I got a bad one that was just gristle.

That's weird, almost every chinese place I have been to and all the ones in my city have a rather large difference between them. It can be rather frustrating as you need to eat around to learn the best items on the menu and there can be a difference between restaurants. An excellent dish at one place might suck at another, or be cooked completely differently.
Many places also seem to have slightly different menus. Especially with the appetizers. Guess your places just suck.

My favorite dish is cold sesame noodles. I usually use it as a test to check the differences between restaurants, as I have gotten completely different presentations, qualities, sauces, and toppings for it from places right next to each other. I have gotten some weird additions and shitty sauces or noodles from some places. One place even had pickles in it, I hated that.

Really, OP? Where do you live? Few of the Chinese restaurants in my area even offer the the exact same menu items let alone taste alike.
Of course, the standard items are offered at each (lo mein, mei/mai fen/fun, General Tso etc), but they vary considerably one place to the next. Beyond the standards, few of them share items. One place may have beef and yu choy with black bean sauce and the next not but will offer shrimp-stuffed aubergines/eggplants instead and the next one will offer saltfish-and-chicken-fried rice but the one following will not but offer ham-and-tomato fried rice instead.
In Chinatown itself, there are, besides Chinese restaurants, numerous other Asian cuisines, each generally run by Chinese (usually from Guangdong). Every Viet place in Chinatown has a menu identical to every other Viet place in Chinatown and their dishes all taste alike. The Chinese food, though... not at all.

Real answer: They don't all taste the same but a lot of Chinese takeout places buy their supplies from giant food service supply companies so taste is likely to conform. All you need is a few thousand dollars and a service supply company will outfit you with all the supplies you need to start a Chinese take-out place.

I don't believe in the superiority of China, but it's not like America is free from lack of quality control and food standards. Mad Cow disease? Salmonella outbreaks? Plastic chips found in ground beef. Problem is, you're comparing two different countries at two different points of development. China is still in the early stages to adapting to large scale consumerism for it's huge population. Also, it's not like the Chinese people don't care about food safety, that's why they let news of the outbreaks get out and punish those responsible with the death penalty, like in the case of the tainted milk. I'm sure our supermarkets are a billion times better than any Chinese supermarket, but on a local level, from village to village, small-scale production, I wouldn't doubt if the quality of produce and livestock was on an equal level with anything around here. When's the last time you had fresh fresh caught fish right out of the water, minutes before you ordered your meal?

I have friend who married a Chinese woman for some reason. She runs 'chinese food' kiosks at several locations (public markets, asian stripmalls, etc). Most of what she sells is just cooking frozen stuff bought in boxes from a seedy looking company in the dirty industrial district.
And you really don't want "real Chinese food", by example of the stuff I ate in China on a business trip. Most food was questionable (chew, swallow, don't-think-about-it-too-much-you-need-to-eat...).

There was good stuff, usually in the upscale places near major hotels and office buildings.
In the U.S. there is the same quality and better in actual fancy Chinese restaurants but the recipes tend to lack tendon, tripe, and other things you fastfooders are squeamish about (even though you are eating it in disguise anyway), and in general, even these fancy places, are a lot less spicy and less flavorful than everything back in China.

My friend's uncle used to own one. Mostly staffed by family, they also lived upstairs above the restaurant.

Other places in the area I've noticed were staffed by a mix. A chunk of them were family, but they had a few outsiders. The one place where I went to college had a few Mexicans and a white blonde hair blue eye girl working there.

There is a small family run chinese bakery near my home that I go to often. You can look into the back of the shop and see them making bread and pasteries. Nothing is better than a fresh pork bun from there.
