I think I've come to the right place, (Britfag here) I want to start making some next level donuts.

ItaliAnon who grew up in southeast Asia here.
My two favourite doughnuts come from my home and adopted cultures.
1) Zeppole (zehp-poh-leh) napoletane/graffie (grahf-fyeh)
Yeast-risen potato dough doughnuts flavoured with lemon, deep-fried and dusted with granulated sugar fresh out of the fryer. Grolious.
2) Kaya donuts with sweet coconut flake.
Yeast-risen doughnuts filled with kaya, a coconut-flavoured custard similar to Neapolitan zabaglione (dsah-bah-lyoh-neh) where egg yolks and sugar are beaten together until light in colour and frothy. The difference being is that where zabaglione ends (just sugar and yolk), kaya only just begins. It is then mixed with heavy coconut milk and even more sugar then cooked in a double boiler until thick and shiny. Once out of the fryer, they are rolled, still hot, in sweetened flakes of coconut.
So. Fucking. Good.
So yes: coconut is a good idea.

Well, in SEA, doughnuts are not just sweet but can also be sweet-and-salty or even sweet-and-salty-and-pungent/spicy/hot.
Examples are plain dough white-chocolate-and-white-cheese coated doughnuts and plain dough doughnuts coated in hot-and-spicy meat floss (usually chicken floss since pork floss is not allowed by muslims and beef floss is not allowed by hindus and some buddhists).
Back home, we don't have many different types of doughnuts, per se, but there is something Persian-influenced Greeks brought back with them. It's a fried dough dish similar to gulab jamun that we call 'struffoli.' They're lemon-flavoured dough nuggets that are tossed with candied sprinkles (most commonly) or pearled sugar (uncommon, but WAY better) and hot honey. The original is a much larger dough nugget made from curds and barely milled wheat berries that are held together with gram flour and are boiled in honey then tossed with fennelseeds and curled zests of lemon. The original dessert dates back 3-4 millenia while the Greco-Neapolitan version dates back to just after the days of Alexander, so only about 2000 years ago.

I was in Portland a few years ago and I saw voodoo and thinking "eh, this place looks OK" I went it. I didn't know it was such a famous place until I got back. I was seeing it on all those food shows on travel channel and I was pretty shocked when they had a 4chan meetup there as well.

Sure thing.
Here's an image of the recipe. If you'd like me to type it out, I can do that too. The recipe calls for shortening, but says you can use butter instead. I personally like to use lard, because it honestly has a better finished texture than using butter or shortening, but if you don't use lard, I recommend the shortening. Butter won't give them the right texture IMO.
Anyway, this is the best recipe for yeast donuts I've ever tried, It came out of an ancient community cookbook from the 1930s.
