The trick is to fry them once at 325 degrees until lightly browned, remove and pat dry and then fry them again at 350 degrees for about 2 minutes.

Easy peasy, dude. You make the broth first: stock, lemongrass, galangal, kaffir lime, onion, garlic, coriander, chiles; let it simmer for awhile to extract the flavors, then strain it. Then add your other ingrdients: fish sauce, Coconut milk, onions and garlic, more chilies if you want it spicy, mushrooms, meat, veg, etcetc.
I also always add extra lime and coriander at the end.

Making myself a steakhouse-style dinner for dinner. Finishing some skin-on mershed pertader and about to pan-sear up some sirloin. Got a romaine and spinach salad waiting in the fridge that I'll top off with blue cheese, basalmic, and some cherry tomatos while the steak is resting.

I made chili bean dogs for dinner. I improvised and it was the best thing I've had in a very long time. For it to make sense, I'll write the process down here:
>finely dice an onion
>and two cloves of garlic
>pour beans of choice (kidney beans in my case) down with the onion
>mash it all with a fork until it's mushy as fuck
>spice it up with chili, pepper, salt, basil, a lot of bread crumbs and whatever you feel like
>pur that semi-firm mush in a well buttered pan
>let it fry for a good while (until the onion is cooked)
>dice some tomato/avocado/both meanwhile
>while it's about to get done, put some cheese in the pan and let it smelt all over that glorious shit
>when it's done, spread it all well in hot dog bread
>put the diced tomato/avocado/both on top
>top it with some dressing

It's so easy to make lunch boxes out of leftovers, and you'll always get full earlier than you'd expect, even though it's an absolutely fantastic taste raping your mouth.

Curry chicken with spinach, no side dishes. I like to keep it as simple, quick and dirty as possible, and any more ingredient preparation besides chopping a few things up is too much. Got any other simple cooking recipes? There are several infopics floating around, but they all consist of several paragraphs of instructions and huge lists of spices and ingredients and still call themselves "simple" or "easy".
