Chicken Paprikash aka Paprika Chicken. It's a Hungarian dish my mom used to make.

It's basically shredded chicken in a sour cream/paprika/sauteed onion sauce over boiled dumplings.

Paprikáscsirke. It's pretty easy to make, honestly. I've never seen it served as shredded chicken, though, usually whole legs (thigh and drumstick) or, less commonly, cubes of chicken breast or thigh.

That's true. I usually pair it with pickles, beets, peas or carrots, and then there's the big bowl of mixed salad I keep in the fridge and remake every 3 days that goes on the side of all meals. Just cucumber, lettuce, tomatoes, onion, and a mix of bell pepper, peas and corn from the freezer minced and thrown together.

I tend to get too routinely with weekday meals, though. Should make the effort to increase variation.
