The borders don't touch the pan and don't get "roasted" properly.

You have to flip it earlier, while the top's still raw batter, so it will sink down and sit on the pan. If it's cooked through when you flip it then it's curled up and doesn't work.

Use two elements and two pans. When you flip the pancake, put it into the other pan, which will still be piping hot. You'll get a good "sear" that way.
