I tried making mochi with a recipe online. It came out completely lumpy and awkward. Does anyone have any good recipes? (I have 12 pounds of mochiko coming in sometime this week, maybe today)

Actually I couldn't find any in supermarkets at all. But I did order some on Amazon. But most of the offers are these new "Add-On" products where you can only buy them if you pay a certain amount for something else. Gay.
So anyway I ordered a bulk (12 pounds) of it and they cancelled on me (they decided to tell me it wasn't showing up the day it was supposed to be delivered and they didn't do order tracking).
So I ordered again directly from Koda Farms for 9 pounds just now. Huge hassle for food.

I think you can just get mochi rice and run it through some kind of thing similar to a potato ricer. My grandma has one and that's how she does it.

Here's the recipe I use:

2 cups mochiko
1 1/4 cup sugar
2 cups water
(1/4 cup cocoa powder for chocolate mochi)

Combine ingredients in a microwavable bowl. Microwave on high for 5-6 minutes (more if your microwave cooks evenly, less if it doesn't). Take it out and stir, then keep microwaving at 1 minute intervals, stirring in between. Total time is usually around 10 minutes, including the first five. It should look a little glossy and evenly cooked when done, and it's okay if the texture is a little soft because it'll keep cooking for a bit while it rests. Once it's cool enough to handle, you can coat it with potato starch and add fillings.

A nice way to make mochiko without frying whatever apparel you're using is to soak the mochi rice a little in water, then let it dry completely.
The grains will then be very crumbly, making for an easy grinding.
