Whether they are using strictly water, or a water based stock, is a matter of preference and cooking heritage.

Actually, water is purified by filtering it through progressively smaller material. Not by distilling it. They generally start by filtering it through sand, then through volcanic rock, and then at pressure through some nano-metre porous substance or some shit. In most cities in the US that have filtering plants, the water is often more mineral rich, and thus healthier then "mountain spring" water, which is fed by evaporation of ocean water into rainfall.
