Fill with caramel

If you want to take it to the next level, sprinkle the top of the caramel with sugar, then torch it like Creme Brulee.

You might slice the apple in two, hollow out the core the apple, then place the unmelted caramel in the center and replace the second half of the apple, making it whole again. This is all after the poaching in milk and cinnamon of course. Then wrap the thing in a bit of prosciutto or thin bacon and bake it at 450-475° for about 10 minutes. Then go ahead with maybe a dusting of brown sugar and finally go over with a torch for the Creme Brulee effect.
