Dessert thread.

Bonus points if there's peanut butter in it.

Here's something I made earlier this evening, a flourless dark chocolate and espresso coffee souffle cake, made in a 9" quiche pan, then dusted with100% cocoa and confectioners sugar.
Not the prettiest, but at least I made it and am not copy/pasting other peoples work...

Now, critique!

The cookcenter is rated to more Btu/h than my home boiler! :p
I'm a home/building contractor, so I get "almost new" display appliances for pennies on the dollar. Like last week, I got a 5 quart KitchenAid $400 mixer for $35.00

I made some coffee ice cream and pecan meringue cookies tonight. Coffee ice cream has already been ice cream maker-ed, looks like it's going to be nice and solid.

Mostly made the cookies because I didn't want to waste the egg whites off the egg yolks used in the ice cream.

Fuck I love that stuff, so easy to make and so good. In autumn I like to make it with pears and do the cream with a bit of cinnamon and bourbon in it.

Oh, my god, seriously, this shit is the greatest thing ever. Definitely the best cake I ever made, but the ingredients totaled around 70 bucks (though I did not use them all).

http://www.saveur.com/article/Recipes/Black-Forest-Cherry-Torte

Be warned: this requires making brandied cherries, which takes at least six weeks. But the result is well worth it. Oh, so worth it.

Some other favorites of mine, especially around the holiday season:

Pear pie: Spiced with cardamom and almond extract, with almond meal worked into the pastry crust.

Bourbon balls: a mixture of ground pecans, powdered sugar, butter, and bourbon dipped in dark chocolate.

Stuffed Dates: Cover a whole pecan or walnut in marzipan, stuff it into the middle of a pitted date, and roll the whole ensemble in powdered sugar.

Chestnut Honey Pears: http://www.saveur.com/article/Recipes/Chestnut-Honey-Pears.. Pears poached in a light syrup flavored with vanilla and orange zest, then carmelized in chestnut honey and drizzled with a thyme-butter-infused reduction of the original syrup and served with ice cream.

No, I just made that up. Cream-filled sweet breads are wonderful, though, and I recently made a pizza with orange zested mascarpone and (uncandied) chanterelles, which are already pretty sweet.
