2 oz corn oil
2 cups red onion, diced(1 lg onion)
2 tbsp fresh garlic, minced(3 cloves)
8 oz mexican chorizo
2 lbs ground beef
1 cup dried ground chilies like ancho, chipotle, morita, and arbol
1 28oz canned diced tomato
1 28oz canned crushed tomato
1 qt beef broth
1/4 cup corn meal
1 tbsp ground cumin
1 tbsp cracked black pepper
4 15oz cans of black beans
2 tbsp + 1tsp kosher salt(not table salt)

In a lagre pot, heat the oil
Add onion, saute until transluscent
Add garlic, meat, and chilies: brown
Add tomatoes, broth, cornmeal, cumin, and pepper
Stir well, simmer slow for 1 hour
Add beans if you want...yes it's ok
Add 2 tbsp salt, stir and simmer an additional 10 minutes before tasting
Adjust with remaining salt if necessary
Eat

Beans do change the texture. There are many ,many varieties of chili and therefor different textures. Some chilis, while tasty are not the kind of chili that a seasoned chili cook would be proud of. A fantastic chili has a beautiful texture. A beautiful chili should showcase the meat with a perfect sauce and a perfect balance of all ingredients. Beans just get in the way of all that lovely perfection. I absolutely cherish a perfect chili and would never add beans to the initial batch, though if eating leftovers and if I need to stretch what is left I will add some beans. It isnt totally wrong or anything, its just not the most desirable ingredient in a perfect chili.
