For 2 nights I made these stuffed pasta shells

Mozzarella, ricotta, parmesan, portabella mushrooms, and spinach stuffing (2 eggs beaten in)

But now I'm out of shells, don't feel like buying more, and I have a fair amount of the stuffing left over. What do I do with it? And don't say make lasagna because that'd be the same as buying more shells

Put it on top of a burger. If you don't mind raw egg that is. Or just cook it first.

Just bake it off with some cheese on top and dip crostini or crackers in it.

Or stuff it in something different. Chicken breasts, maybe pound out some cow and make a roulade.

Or freeze it until you feel like buying pasta.

Since I have the egg in it, could I bake it as it is and THEN add it to other things that couldn't be baked with it? What's the best way to do that without it getting all shitty in the pan?

What pray tell are you planning that involves cooking cheese goop *before* combining it with other ingredients?

The egg is there to help it set up and remain a cohesive mass. Don't expect it to be able to work it much once it's cooked.

I would say freeze it. That'll freeze really well and it will be ready when you do buy pasta shells again.

You can eat it straight out of the fridge if you're not a big pansy who's afraid of raw eggs.

Why don't you smear it on a well-done steak, or mix it with your ramen? Maybe you could take it down to Chipotle and see if they'll put it in a burrito for you.
