Perfect omelette. How?

Also what to put in it? I'd make it with diced tomato, diced bell pepper and diced mozzarella unless someone has a better idea.

I like to do it in butter with cheddar cheese as a stuffing.

How I do Omlettes:

Appropriate number of eggs depending on size (I usually use ~3 large)
Your choice of dead animals. I usually go for chicken.
Cheese. Mozzarella is best.
Red onion.

>So dice the chicken and fry it up quickly, then stuff it in a bowl for the meantime.
>Splash a little olive oil into the frying pan and whisk your eggs up
>Pour eggs into pan. A trick here is to use your spatula (make sure its plastic/wooden) to cut lines in the omelette as it cooks, so the still-runny egg gets to the bottom and cooks.
>Dont flip it
>Put meat, cheese and diced onion onto one half of the omlette
>Fold
>Put a bit of pressure on it with your spatula so the cheese melts it closed
>Flip away if you feel you have to. I normally dont bother.
>Serve with side salad and BBQ sauce because BBQ sauce is fucking awesome.

OP here. Ended up making scrambled eggs with chives and sausage and roasted potatoes on the side. Thanks for the tips anyway. Especially I didn't know the drawing lines trick which should be of great help in the future because so far I've had lots of trouble with the underside being brown already and the upside still being liquid.

You can also reduce the heat and cook it for longer, or lift up a corner of the omelette and tilt the pan so the liquid runs out underneath it and cooks there.
