Dear /ck/,

Has anyone else fallen under the spell of phở/pho? I've been obsessed since I moved to Victoria, BC - a city full of Vietnamese joints.

Can any other soup compare?

I love it. The only soup I like more is Bun Bo Hue, which is another Vietnamese soup. It's like a richer, spicier version of pho. If you have good Viet restaurants in your area you should check it out.

Hows UVic, all I hear about it is its a party school for undergrads, working on my bsc at UBC myself.

Also the best Viet food I've ever had was in Cali around the OC, the Viet community there is huge and the food is world class.

A Khmer soup of pork and seafood broth with noodles, Asian chives, fried bread (with a shrimp in it) and cilantro (and/or Thai basil).
Viet call it "pho nam vang" or "hu tieu nam vang" because "Nam Vang" is old Viet for for Phnom Penh. It's called ktiev in Khmer.
Most pho shops sell it, but it's not as good as in proper ktiev shops because pho shops specialise in pho broth, so they can't spend the time, money and labour to make pho broth, chicken pho broth and nam vang pho broth; that's too much. The one sold in pho shops is usually from a mix. If you can find a Khmer place that specialises in ktiev, you should definitely try it. Just don't get organ meat in it, if you don't like that sort of thing.

It's fucking awesome so far. The campus is beautiful (tons of trees, plants, gardens, native art, hiking, etc.), the library is well run and extensive, the resources for graduate students are numerous, and the students (the only experience I have so far is with grad students) and faculty are crazy smart and very passionate. The university also places a lot of importance on the fact that it sits on first nations land - Coast Salish land - and it is constantly encouraging the students/staff/faculty to be engaged in learning more about native communities.

I'm getting my PhD in linguistics here and the department is the most friendly and engaged one I've ever encountered.

The island is super expensive compared to the States, but my boyfriend and I both totally love it so far.

In terms of a party school, I've definitely noticed that pot culture is huge here, in way that is shockingly public to an American lol. During the welcome celebrations there were *three* fucking vendors selling nothing but pieces lol.

Thats cool, it sounds a lot like UBC from the way you describe it, I can't say much about our arts/language facilities but the science facilities are supposed to be world class.

For me I'm just finishing up my Bsc in Biochemistry, I want to work a bit and go back for more school.

If you guys ever do come over, and you happen to be a fan of Japanese food you gotta try out Guu. Probably my favourite place to eat in all of Vancouver.

It's right up there among my top 5 favorite soups, and has knocked matzo ball soup off the pedestal as my go to cold or flu cure. It must be beef pho, however. The chicken is not a spiced broth, and that is what is truly unique.
