I myself am enjoying an extra-large eggplant and bacon pizza from a local joint around here. Even though they're located next to a gas station on the outskirts of town, their pizza is damn good.

Forgive me for the guerilla-style size comparison. I just wanted to emphasize its largeness.

Man, I wish we could get eggplant pizza here. In college, this place by me used to have 24 hour delivery, a ridiculous assortment of toppings, and a 16" 2-topping pizza + 30 wings special for $20. I have no clue how they stayed in business, but thanks to them taking campus money, they kept me fed.

Eggplant on pizza is godly. I had an eggplant pesto pizza last night (which has big slices of eggplant, pesto, tomatoes, and ricotta cheese on it) and I had the leftovers today. The best pizza I've ever had is an eggplant rollatini pizza.

Goddamn eggplant is fucking delicious.

Don't overdo it over a short period and it's not too bad. When I was vegetarian, eggplant was kinda a treat. Still is, really.

Braised beef shanks turned into open-faced sandwiches with the braised meat (including the onions and garlic that were braised along with it), sauteed mushrooms and cheese, toasted then "french dipped" with the leftover braising sauce (which was made from red wine, tomato puree, a touch of beef stock, onions, garlic, bay leaf, cracked pepper and a couple allspice berries)
It was GLORIOUS.

I have a few pounds of frozen ground sirloin so later I'm going to make some white people fake american tacos. you know flour tortillas, seasoned ground beef, lettuce, tomato, sour cream and cheese.

hate away, but they taste good and i need to use some ground beef. i make legit tacos as well but i'm not feeling them tonight. i want a homemade taco supreme.
