Collegefag here who happens to be decent in the kitchen.

Bought some salmon on sale. Any favorite recipes?

I usually just do the whole lemon thing... will probably go that route this time.

not really cold enough here in Texas yet, but i'd kill for some Salmon Corn Chowder in about a month or two.

Buncha cheddar
salmon
potatoes
onions
carrots
etc

How about blackened salmon. Coat salmon in a dry rub of paprika, cayenne, thyme, oregano, salt and pepper.

Cook it in a heavy based pan and add butter to finish it.

not as good cold, mate. there are some really easy recipes on the net. pretty much just put everything in a pot and let in simmer to oblivion is what i do. but i like veggy moosh chowder, lol.

Make fish cakes. Just blend them with some chili, lemongrass/limeleaves, fish sauce, spring onion, garlic and stuff.

Eat with a glass noodle salad with loads of coriander. Can be eaten cold or room temp.

This is a Japanese recipe. Make a coating from7
* Miso
* Sugar
* Ground fresh Ginger (use a garlic press)
* Sake (Rice vinegar or Lemonjuice is a replacement)
* Soba Tsuyu (Soysauce can be a replacement)
* Dashi powder
Cut the salmon into slices, coat it with the mixture and put them in pan on low heat. Alternatively you can use an oven to roast them. Pan can be very slightly buttered, but no oil. Salmon needs to be thawed and needs to be good bacteriological quality as this does NOT use much heat. Careful, the sugar will burn easily. Once it browns on the outside you are done, the salmon should be juicy but pink, not red on the inside.

A couple of days ago I made some grilled salmon fillets. Used a combination of hot sauce, lemon juice, olive oil, and stuff like paprika, garlic powder, pepper, etc as a marinade. Made sure not to overcook it like so many people do. It looks like it'd be spicy with the pepper-based ingredients, but it was actually quite zesty. Very delicious
