its easy to make mock taco meat out of lentils and beans. overcook them and mash once they're soft enough, add taco mix.

Depends where you are and what your culture is. If you're from the subcontinent and/or are Hindu, 'vegetarian' implies omission also of eggs.
If you're in Burma, krill/shrimp don't count as animals and, as such, ngapi, Burmese-style shrimp paste, is considered to be vegetarian. Some Burmese even consider fish to be vegetarian.
In the west, however, vegetarian generally implies ovolactovegetarianism, yes.
