Carbonara isn't easy.

The trick is low heat, otherwise you'd turn the egg based sauce into chunks (the white of the egg), and which doesn't meld well with the pasta.

Also don't burn the bacon to a crisp. You don't want soft pasta with tough bacon, it's not nice. Everything should be soft and easy to chew.

Carbonara is actual used to test chef's ability.

I keep wanting to make it again, but I'm not sure if I could redeem it. My mistakes were too much cream and WAY too much parmesan cheese. I'm not a big fan of parmesan, but I can stand it in smaller amounts when it's more of an accent instead of a main attraction. It also seemed like there was too much liquid or it was too thin/soupy. Then again, I've never had it before, so I didn't have anything to aim for. Might have to find a place close by and try it in a restaurant.

The problem with that pic (besides the fact they're using bacon instead of pancetta) is that they do not take the pan off the heat when they add the egg mixture. It's good if you want spaghetti and scrambled eggs, though.

Can't really comment on personal preference of parmesan cheese... Have you tried a proper one? (e.g. from a deli as opposed to supermarket).

It does have powerful strong smell, so if it's not something you feel comfortable with you should probably avoid it.

As for the cream, remember that there are variety of cream. Normal, thick, sour. You should try the thick cream, or perhaps go as far as sour.

Some people swear by the fat from the bacon to cook everything.

Yes, best to go to a restaurant that does good pasta. But don't be surprise if some places do them woefully.

no i dont. just about every recipe posted on here is shit, especially verticals. that floury tortellini with roasted broccoli and tomatoes recipe is fucking terrible.

spaghetti, sauteed pancetta, tossed with seasoned beaten egg to coat. it isn't hard, you just need to practice a couple of times. it isn't something you need a recipe for.
