Round Eleven – (Sep 6th-Sep 13th)

-You MUST timestamp your entry photo. No timestamp, no vote. You only have to timestamp your completed dish photo, not multiple photos if you’re posting a set.
-The more photos you post, the better! We want to see your cooking. Detailing the cooking process/posting a recipe is encouraged (but not mandatory).
-If you are not one of the 9 contestants remaining, or have been eliminated already, don’t look at that as a reason to stop posting. You can still do challenges and post your meals, just be sure to remember to say that your submission is “Not for vote” or “For consideration only.”
-Elimination Rounds carry penalties and/or bonuses. Bonuses will apply to the top contestant or contestants for that round, and will usually involve some kind of perk or benefit for the next challenge. Penalties are for the bottom five contestants of any E-Round, and are meant to make the following challenge more difficult.

My entry: Ragu of pork cheek and beef shank with tagliatelle.

It was made with half and half pork cheek and beef shank. Probably around 2 lbs. of meat total. 1 can of tomatoes, white wine, milk, carrot, onion, celery and various spices.

All slowly cooked for 6 hours. The dish was made under a lot of time pressure while doing a lot other things so no pictures from the process.

Topped with Parmigiano-Reggiano brought home from Nice. To go with it I had a glass of Australian Cabernet Merlot. I'm very tired and I probably forgot a lot of details but feel free to ask questions.

This week’s entry is a creamy seafood stew thinned with a bit of pasta cooking water to create an opulent sauce for rustic, homemade pappardelle. The pappardelle is smooth and velvety; it is enriched with plenty of egg yolks. I used buttery crawfish tails, rich crabmeat, and local produce to create the delightful and decadent sauce.

Simple Shrimp Scampi

Cut four cloves of garlic and one medium onion info fine pieces. Finely chop a couple tablespoons of parsley, set aside. Peel and devein one pound of medium shrimp. Roll a lemon to prepare for juicing.

Heat up two tablespoons of butter and two tablespoons of olive oil in a pan until frothing subsides. Toss in garlic and onion, sautee until the garlic begins to brown, add shrimp and a half cup of sweet white wine. Quickly spread the shrimp out and let the wine come to a boil. Cook two minutes, then flip the shrimp and cook another minute. Dust with red pepper flakes or ground red pepper, add the finely chopped parsley, and grind some black pepper. Cut the lemon in half, squeeze over the shrimp. Stir well, add salt to taste.

Serve over your favorite pasta.

So, I haven't had a lot of time to take pictures with my hands full on cooking, forming the meatballs and making phone calls to get some wonderful hand made spaghetti delivered.

I reason why I made spaghetti and meatballs was because this dish remains for me, the iconic Italian pasta dish that nobody in my bloody childhood seemed to do right, it the spaghetti wasn't overcooked or undercooked, the meatballs were just bland, soggy anemic lumps of crap. So I made my own.

Alright, spaghetti and meatballs. Let's start with the pasta itself, I know I'm a cop out because I didn't roll my own dough and didn't make my own pasta but it's been a busy week and I can't afford a pasta making machine. However, I did find a nice Italian bistro down the road which does do fresh pasta and they were quite happy to offer to sell me some of the ones they made, so homemade pasta? No. Fresh pasta? Yes.
The tomato sauce I made consists of tinned tomatoes, a dash of white wine, vegetable stock, shallots, garlic and basil. Dice the shallots, halve the garlic and sauteed them briefly, deglazed the pan with white wine, added in vegetable stock, tomatoes, basil and allowed it to reduce.

The meatballs I originally planned to make with a 50% mixture of beef and pork but local supermarket's gone Muslim on me and didn't offer pork mince because "it might offend the Muslims". So I opted for meatballs made with beef, breadcrumbs and added finely diced chorizo (for that extra spicy and fragrant kick), garlic, parsley, Parmesan cheese and a dash of Worcestershire sauce. Then I pan-fried the lot till they were golden brown, threw them in the oven for another 10 minutes with a simple tomato sauce and they were ready to serve.
To garnish, I topped it with some more Parmesan cheese immediately after plating to give the cheese on top a little bit of time to melt.
