Take some flatbread or a small, thin pizza crust. By all means make your own, but that kind of undermines the quick part.

In any case, rub it with olive oil, spread pesto over it, then add diced tomatoes and onion. Optional garlic, basil, and rosemary. Sprinkle with cheese, I like Parmesan.

Bake for like 5-6 minutes. Light little psudo-pizza.

Alternatively, use olive slices, feta cheese, and mint for a greek variant.

Potato skins are always good. Cut a potato in half, scoop out a little bit from the middle to make each half concave. Fill with shredded cheddar. Cook a couple strips of bacon, dice them up, and sprinkle over the cheddar. Bake.

seriously im greek and I hate that shit. nearly ALL traditional greek food I've had never ever has mint in it. my grandmother who was born and raised in greece never eats it, nor do my relatives in greece. the only shit you get at Americanized greek restaurants have mint in it.

you have to work on the portions yourself to make it to your liking but it's fucking awesome on mexican food and would make your pic like a taco bell quesadilla

another snack I like even though it's really filling:

sardine sauce:

>chopped onion
>lemon juice
>garlic
>dill

shit tastes great on top of canned sardines, maybe put it all on a cracker

Turkishfag here, we use mint all the time when dairy is involved. I've greek relatives and they use mint as well. You're just a picky eater. Like parsley, it counteracts garlic well.

Mint leaves, tapenade, tangy, firm feta, tomatoes and a drizzle of oil makes the best sandwich/salad.
