Do you fry your potato chips/french fries with the skin still on?

Does that kill all the nutrients and dirt from the skin?

I'm going to make thicker cut chips for breakfast and have them between bread. I actually like the skin so I just wash them off without peeling.

That's actually pretty common in england, can't beat a good chip butty for a bit of a treat!

Also frying them with the skin on is the only way I do it, no point throwing out a perfectly edible and delicious part of the potato. Some nutrients will also remain, along with a larger quantity of dietary fibre so it's a win win.

No. I put them in my toaster oven, not toaster. However, if you have big potatoes you could theoretically slice them large enough to fit in a bread toaster, though they will more than likely scorch instead of cook properly.

The microwave is the best way to make crisps/chips. Slice the potato with a mandolin, spray a plate with non stick cooking spray, and lay them flat. Cook till crispy. Peel off the plate, and put in a bowl. Shove em in the freezer for 30 seconds, for some reason the sudden change in temperature makes them even crispier (works with bacon too).

Peeling potatoes is a pain. I rarely do it.

Chip sandwiches are OK, I've had them before with Miracle Whip and commercial bread. I don't think I could have them anymore, though ... the thought makes me gag.

Only fry potatoes in duck fat. Freeze skin on steak cut fries of russet potatoes. Fry once at 340 and lightly brown. Set aside. Turn temp up to 370 and fry again until crisp.

Dust with sea salt, truffle oil, and serve with a herb blended homemade mayo.
