i usualy use a chefs knife for mellons. and i never rly cut bread, just tear it off of the loaf. but ok, so add a bread knife to the list. you still dont need a huge ass knife block with 20 different knives, of which you will use 3 or 4.

also, protip. for any kitchen sheers. buy some EMS shears. about 8 bucks on amazon, will cut anything (you can cut through a penny fairly easily)

i got a set of wustoffs (ridiculous price at a flea market). They have the following items, which I find to be useful:

chef's
paring
carving
honing steel
shears
and a longer paring knife not sure what you'd call it

not all sets have a bunch of useless shit, but the quality is probably better if you buy everything seperately
