It's not that hard. You just need an awl, the pan, and a little practice. I used to make cheese or hot dog filled takoyaki for shits and giggles along side normal ones.

I had something in Malaysa called "Japanese pizza", and it was basically a big takoyaki cake with shrimp, radish, bonito flakes, shredded roasted seaweed and all that other takoyaki stuff, and it was very good.

I was pretty disappointed to find out it wasn't fried octopus so much as it is a wheat ball with octopus inside of it. I sort of expected it to be like a breaded egg, with tako cooked inside slowly to be tender, then dressed in the sauces, and biting into it would be sweet cephalopod heaven that even they can't resist it.
