Yes, and waiting for the dough was a pain in the ass, and not worth the effort. In the future, I'll just get premade crusts or add my own toppings to a frozen pizza.

I mix the dough the night before and then just stick it in the refrigerator to rise slow overnight. I take it out about an hour before prep time so it can warm up a little. It's not significantly more time than using a mix, and the quality is dramatically improved.

Yes. Pretty good, I found dicing the cheese rather than grating gave a better texture.

Well not exactly powder. Like you would chop garlic finely, just little tiny cubes and pieces. Maybe it's bullshit but it seemed to melt more uniformly and gave better browning on top.

i'm gonna go out on a limb and say that op's pizza looks pretty damn good. but thats just a personal thing, I love burnt pizza. its weird because I can't stand any other food being overcooked, I'd eat a steak raw before I'd eat one well done. but burnt pizza does it for me, I'll even recook delivery pizza to make it burnt. dat blackened cheese, dat crispy crunch crust, dos caramalized onions, dat dried out pepperoni. nothing is better.
