My guess with the mice would be he plays a lot of FPS (Maybe quakelive it's very popular outside of the US) and it's pretty common for them to switch around mice if they're not performing how they like or it can even be taken to the extreme of a different mouse for every gun.

Short rib ragout on tagliatelle pasta with a goat cheese demi glace and roasted tomatoes
Deviled egg with cured Tennessee ham, pickle, and onion vinaigrette
Fried sweet breads in a sweet honey mustard sauce
Mussels cooked in a liquid of beer, shallots, and herbs
And a seared scallop on fried risotto in a tomato cream sauce.
A pinot nior out of California to drink

I don't know what the characteristics are supposed to be but it was fresh and clean, not a particularly hammy flavor, more the taste of clean air.
My problem with places like the one I went to is I spend a small fortune and leave hungry, I have never gotten my moneys worth in a high end place in terms of a satisfying meal.

Guh too much, cheese plate was $17 the actual dinner was $120 wine was $30 a glass, dessert was not included either.
It was honestly lazy cooking to me, lots of butter and bacon and cream, so it tasted good and the calorie density was definitely not lacking but I didn't have a single bite that blew me away.
