Round Seven – (Aug 7th-14th)

-You MUST timestamp your entry photo. No timestamp, no vote. You only have to timestamp your completed dish photo, not multiple photos if you’re posting a set.
-The more photos you post, the better! We want to see your cooking. Detailing the cooking process/posting a recipe is encouraged (but not mandatory).
-Please use a tripname or some other way to distinguish you from the other contestants, like a gun or a jar of milk. Use the same name/signifier throughout the remainder of the competition.
***If you are not one of the 14 contestants remaining, or have been eliminated already, don’t look at that as a reason to stop posting. You can still do challenges and post your meals, just be sure to remember to say that your submission is “Not for vote” or “For consideration only.”

Dishes are scored out of a total 20 points, based on 4 categories (worth a maximum of 5 points each); Presentation, Originality, Appeal and Challenge Goals. You may award 0's if you feel the contestant did not meet any expectations for a category.

-Originality: Creativity in composing the dish

I hadn't planned on putting up cumulative scores, mostly because it seems a bit discouraging to those competitors who are at the bottom (and it also takes away a lot of the element of surprise with eliminations), but if more of you guys want to see the scores than not, then I can post them up later in the week.

Some scoring info, for those of you interested:

The weekly winner is chosen by their performance in that week's challenge, without cumulative scores taken into factor. The bottom five are (currently) being chosen based on their previous participation and cumulative score, since not all contestants are participating every week. As we move further along into the competition and every remaining contestant is participating in every challenge, the bottom five will be chosen based on their performance in that week's challenge only. At that point, the criteria for elimination will be a combination of cumulative performance and challenge-specific scores.

This recipe is influenced by an Aztec beverage called “Chocolatl”. It was flavored with rich chocolate, fragrant cinnamon, and spicy chili peppers and drunk warm. I have created a chocolatl-like curd to top a buttery shortbread tart crust. This dessert is excellent served warm or at room temperature.

Sweet/Spicy Beer Butt Baked Chicken!

Take a 5-7lb chicken, innards removed, and coat with tequesquite (I used baking powder, black pepper, salt, and sage.) Set in fridge for 20-30 minutes to cool and let the spice rub dry out the skin.

Heat oven to 325. Put chicken on a beer can in a pan, or on a special beer can pan. Make sure beer is in the can/holder. Bake chicken for 75-90 minutes.

While chicken cooks, mix a teaspoon of cornstarch and tablespoon of water until no lumps remain, set aside. Bring 1/2 cup maple syrup, 1/2 cup orange marmalade, 1/4 cup apple cider, 2 tablespoons sriracha or other chili/garlic sauce, 2 tablespoons dijon mustard, 2 tablespoons unsalted butter, and a teaspoon of freshly-ground black pepper to a boil. Reduce to simer, let reduce to roughly 3/4 cup. Add water/cornstarch mix, stir, let cook 1 minute. Turn off heat.

Remove chicken from oven, bring heat in oven to 500. Brush chicken with the sauce mix, toss chicken in, still on the can/holder, with a couple of cups of water in the pan. cook 12 minutes, pull halfway from oven, re-brush with more glaze, return to oven for another 12 minutes. remove from oven completely, brush with more glaze, let sit 5 minutes.

While that cools, strain the juices left in the pan through a fine mesh sieve, and either into a fat separator or plain cup (I like the fat, more flavor, so it stays.) If you do the separator, wait 5 minutes or so, then pour all of the juices except fat into the remaining glaze, bring back to a boil, mix thoroughly. Same steps apply for those not using a fat separator, just dump it in the glaze pot/pan and heat it up, mix well.

So I ended up baking till 4am in the morning which was hectic as fuck.

I also learnt that I totally suck at rolling cake. Baked two sponge bases, one broke into pieces as I was handling it and this one broke as I finished rolling it. But I guess it still looks aight.

So I tried making flan cake; basically you do the same procedure for flan, pouring caramel into the bottom of a container, pour in the custard batter then top it off with cake batter and bake in a water bath. For the flan mix I used eggs/yolks, powdered sugar, and some reduced whole milk. The chocolate cake batter is cake flour, baking powder, sugar, cocoa powder, oil, eggs and vanilla extract. I know nothing about baking so it's not worth posting "instructional" information about how I mixed these things (I know I screwed up some steps anyway so...). Then I poured the custard batter into the bowls with the caramel bottoms and poured the cake batter over the back of a tablespoon. I baked them until they passed the toothpick test (~30-40min), let them cool and refrigerated them. The red sauce is strawberry puree with some sugar and lemon juice. To plate you have to run a knife around the insides of the bowl/ramekins and hope it falls out after you turn it onto a plate. (This is a square cut from a round bowl which would have been huge for a dessert portion.) The nut brittle is just caramel over chopped walnuts. I think that's it. I'm glad this round is over. Fuck baking

I like the look of the tart without the jelly, but with....the mixture of textures looks so distinctly unpleasant, even when the jelly's on the side (I'm assuming that's the jelly?). Also, the two scoops of ice cream look so separate from the tart - I'd prefer it if a single scoop was just placed on top.

I really like the mix of flavors for this one, although I think I would prefer the blueberry to be in a jam form, partially because the puckered berry craters left by the blueberries are unappealing, and also because they'd add a more concentrated hit of sweetness and flavor.

I'm not usually a fan of the chocolate cake, but the unique texture looks closer to pudding (maybe intentionally, maybe because you admittedly messed up some of the steps), so it looks like it'd be good and go well with the pudding. You have a lot of garnishes, but I think they're presented well and would go with the tastes and textures of the "flan cake."

I like the idea and how it was executed, but I think a "chocolate cookie tart" made with cocoa powder is going to lack some depth, flavorwise, as opposed to a tart made with a ganache (I dunno, I expect some pretty intense chocolate flavors if you're going to reference the Aztecs). That said, I love the crackly brownie-like crust, and the combo of buttery shortbread and chocolate curd is great.
