I like Zatarain's creole seasoning better than Tony's. Tony's has an acrid aftertaste.

The box mixes are good if you are in a hurry or live somewhere other than Louisiana, I guess. I usually avoid them and whip up red beans or jambalamba from scratch. It is much faster to use the box, yes, but red beans and rice and Jambalya are really easy to make and freeze for later if you want to have them at hand quickly.

You should soak them,yes. You may be able to find okra in the freezer section of wal-mart or some other huge supermarket. I use frozen okra in my gumbo with no ill results. Or order some file' powder off the internet and make gumbo file'. I just looked it up, the walmart on Rosemeade in LA has it in stock. this is what it looks like, http://www.walmart.com/ip/All-Natural-Cut-Okra-16-oz/10805103

i guess that will fry up ok, its not fresh but w/e. I used to have to pick the okra from the fields when i was a kid for my dad whos still a fucking farmer. Fuckin okra hurts like hell to pick, have to wear longsleeves because the plants have tiny thorns that makes itch whatever touches it. Kinda like rolling around in grass times ten. But hey, i can atleast say ive picked Okra.

you can buy prebreaded okra for frying, I would think the frozen plain okra would be too wet to get a good coating on it, unless you used a batter and fried them like fritters. I was just assuming you meant it for gumbo, oops.
