That picture looks like hamburger mac not a taco casserole. You can make it easily with no need to bake by making mac and cheese and then adding pre-browned beef and some veggies if desired. Pretty tasty but greasy as fuck, even after draining fat and what not.

As for a good taco caserole one of our family favorites is to use a cast iron skillet to brown meat, some canned tomatoes and whatever else (onions, mushrooms, etc) and then pour some corn bread mix on top and bake it. You then scope it out and flip it into a bowl. Toss some cheese, sour cream and lettuce on top and boom. Taco skillet caserole.

Makes for great left overs too.

My mom had a seamstress friend who made this dish once... long macaroni with diced tomatoes, ground beef, onions and spices and covered in American cheese slices before being broiled.

TBQH it's not something you'd serve to guests but it was a family dish. I think the uniqueness of the long macaroni (try to eat those in sauce) and the broiled American cheese made it special.

I think it's a nice twist on the quick pasta and beef and it turns something boring into an interesting dish.
