Patent D222380 references that one, but also mentions some intermediate work that I didn't bother to look for - catalog references and whatnot.

This assumes you're looking for a wheel type, not a mezzaluna type.

The art prior to 482830 seemed to be much more complex, not a general purpose roller knife - intricate features like having to ride on a guide channel to keep straight cuts in wallpaper.

482830 describes what appears to be a general purpose roller knife, suitable for many things. I'm sure it got redesigned to make it easier to clean for food applications.
