My mom always did/does this. We never got sick. But I don't do it myself though, it might not be a big risk but it's literally zero effort to do it the right way, and I don't need to prove myself to tough guys on the internet. I just put it in the fridge the day before I wanna use it and leave it a room temp for 30 mins before cooking.
