1. Enchiladas are not closed, you made burritos then put cheese on top of them. It is not a 'preference' it's literally part of what differentiates an enchilada from a smothered burrito.

enchiladas use corn tortillas, you dip them in hot oil for a few seconds to make them pliable

Apparently I've been making enchiladas wrong this entire time. I would pack them tightly into an oven dish then just scoop the finished product out like a casserole. I kinda like my way better though, as you can just take what you want.

No. I didn't say that so I don't know why you're asking that. Mole has cocoa in it; gritty, brown spicy chocolatey crap. If you're using 'mole' as some 'close to the border' local generic term for 'sauce' or something, clever, but that's not how most people would know it. Enchiladas around here are discussed as TexMex. This is an awful conflation of different dishes. Just sauced and cheesed burritos that went in the oven. Sauce is way too thick and there's nowhere near enough. The pan should be end to end sauce and all of the *corn tortillas need be soaked.
They have these things at strip mall "mexican" restaurants.

I'm a chef and I actually like good mole which is hard to come by. But in the states no one would refer to enchilada sauce as mole. Mole is usually a cocoa sauce cooked with chicken if you see it on a menu. Enchiladas are fairly straightforward, with a clear definition. You can argue the semantics of what words mean what and where, but it's just a distraction. A mole sauce that isn't gritty is extremely rare I've found. I've eaten plenty of it. It's not similar to enchilada sauce and you don't baste burritos with it.
