No, it's brewed and dehydrated, then freeze dried. If it was just freeze dried ground beans then you'd still need to brew it.

To me most brewed coffee tastes sour and bitter, even after adding cream/sugar, whereas instant coffee tastes more moderate. I assume it's because a lot of those bitter and sour compounds get rekt in the processing.

They don't do that. Most big-name instant coffee producers aim to maximize extraction way beyond normal levels. Fresh brewed coffee extracts around 20% of the total mass of ground coffee, whereas most industrial brewed coffee extracts around 50%. That extra 30% does not taste very good, but it allows producers to more than double their production for the same raw ingredients. Then the freeze-drying process further degrades the flavour.

Add enough hot water to dissolve the crystals and then drown that shit in milk or whatever plant based substitute you prefer. If you're a fat shit who needs to add sugar, then do that too. I'm not getting anywhere near that number, either. I just calculated it and since 1 cup of instant supposedly weighs 43g and I use 4tsp to a serving, that's ((43g ÷ 48 tsp in a cup) × 4tsp to a serving) ≈ 3.58g per. 397g in the jar ÷ 3.58g servings ≈ 110 servings
That's if the weight of 1 cup of the stuff is accurate which I strongly suspect it's not. There's no way there are 9 cups of granules in that jar.
