how and why is it so bad? its li terally ground, freezedried coffee. I've never had instant coffee that tasted like normal coffee. its always weirdly sour and tastes like garbage

No, it's brewed and dehydrated, then freeze dried. If it was just freeze dried ground beans then you'd still need to brew it.

To me most brewed coffee tastes sour and bitter, even after adding cream/sugar, whereas instant coffee tastes more moderate. I assume it's because a lot of those bitter and sour compounds get rekt in the processing.

I'm not getting anywhere near that number, either. I just calculated it and since 1 cup of instant supposedly weighs 43g and I use 4tsp to a serving, that's ((43g ÷ 48 tsp in a cup) × 4tsp to a serving) ≈ 3.58g per. 397g in the jar ÷ 3.58g servings ≈ 110 servings
That's if the weight of 1 cup of the stuff is accurate which I strongly suspect it's not. There's no way there are 9 cups of granules in that jar.
