Any chefs out there that can help me out here. I like to fry (cast iron pan, low heat, extra virgin olive oil) kale with onion (all kinds), garlic (chopped then crushed) and shredded ginger and add it to rice or cous cous or serve it with some meat like chicken. But it's bland as hell. I tried adding spices like red pepper and parsley and turmeric and salt and italian seasoning but it's still pretty bland. What am I missing in my recipe?

Well, I cook kale often and the family like it. I do it in a few different ways, most recently blanched, shocked, chopped and cooked in butter with chopped onion then, finally, mashed into some potatoes. Had it as a side to a pot-roasted pork shoulder I cooked in homemade onion gravy.
It's delicious.
Another thing I do is lentil and kale soup. After blanching etc, I chop the kale and put it in a blender with water and blitz until finely chopped then strain and press, retaining the green water.
I saute the lawn clippings in olive oil with garlic, onion and chili, deglazing with plain water a few times to help caramelise the onions.
Next, I add par-cooked lentils (cooked, high pressure, 11 minutes then allowed to depressurise on its own) and add its cooking liquid a little at a time to finish the lentils through.
Finally, I add the green water and a vegetable stock cube and serve with crusty bread.
I also like to cook kale as I do collards IE chopped in larger pieces and stew-teed (idk wtf to call the technique in English) with chopped streaky bacon and thinly sliced onion until tender and close to dry. Great side to roasts.
Oh, and because I forgot to mention, I remove the rib from each leaf for these. The ribs are great as an extremely ugly stir fry vegetable. Use them with chicken or pork.

butter, the more fat the tastier, also a good dose of salt to enhance flavor. At that point just eat something else because it's fat and salt and it's still kale so it tastes gross. (It's healthy yes, but you might as well just eat a balanced meal with other veggies, like steak with some potatoes and cornsalad)

It's best to have your kale dried after blanching before adding oil. Easiest way is to put it in the pan first while it warms up so the water evaporates

I could eat kale with every meal

Here's how I make it:
1. slow simmer with onions and garlic in a good amount of chicken broth/stock for a few hours

2. you can eat it like that or throw in some chorizo and potatoes and make it into a soup

3. throw some in a coup of canned chicken soup you're heating up

4. throw a leaf or two in ramen you'e making

5. throw some in the frying pan when making breakfast and mix with potatoes and eggs; it cooks fast

Oh it's definitely not bland; it has a strong leafy, earthy flavor

Yeah I was thinking some kind of spicy sausage would go well with it.
I'm going to try blanch and cool then fry in butter with garlic and ginger and maybe onion or peppers, next time after I'll try steaming it. Then mash that into some savory spiced sweet potatoes and serve with a spicy hot sausage. Thanks for the tips everyone.

The best way to prepare kale is to chop it incredibly finely, then dump it in the trash can (dusty bineroony if you're British). The greenery helps cover up less pleasant garbage.

How is it bland? Are you not salting it properly? Kale has a pretty strong green and bitter flavor. I'm not a big fan of it myself but my girl likes it so I'd dress it up raw as part of a salad. Chop it up into bite sized pieces and I'd soak it a bit to alleviate some of the bitterness since I'd just eat it raw. Then do it up like any other salad, salt pepper vinegar cucumber tomato garbanzo beans corn spices peppers whatever
